Emerging buldak and falooda, New Classics dirty soda and hibiscus, and reinvented favorites banana and deli salads are among the foods, flavors, and beverages to know, with CDMX as the cuisine to watch.

CHICAGO, Oct. 7, 2026/PRNewswire/ — Datassential, the leading food and beverage intelligence platform, today released highlights from its 2027 Trends Report, predicting the foods, flavors, and beverages set to shape menus and retail in the year ahead and beyond. Going into 2027, consumer interest in new food and beverage trends is high, with 75% saying they’re looking forward to new food and beverage trends. Because trends tend to start on restaurant menus before they reach grocery shelves, the Datassential 2027 Trends Report is key to knowing what emerging trends and flavors could play a big role in manufacturer and operator success in 2027 and beyond.

75% of consumers look forward to new 2027 food and beverage trends. Get a first look at what’s next from Datassential.

2027 Trends at a Glance

Late MAC Stage Concepts Get New Life: Datassential’s Menu Adoption Cycle (MAC), built on more than 20 years of menu and consumer data, tracks trends from Inception through Adoption and Proliferation to Ubiquity. Late-stage concepts, those in Proliferation or Ubiquity, can find new life when operators use them in new ways. Five are making a comeback: banana, anchovy, mango, the old fashioned, and deli salads.

“Heading into 2027, we see some later stage MAC concepts getting new life,” said Jaclyn Marks, Senior Publications Manager and Trendologist at Datassential. “Banana, anchovy, mango, deli salads, and the old fashioned, for instance, have been around forever, but enterprising operators are showcasing them in next-level applications and as flavors—think banana coffee and cocktails or mango sticky rice ice cream and pies.”

New Classics to Know for 2027: Ten foods, flavors, and beverages have graduated to New Classics, which highlights trends Datassential flagged early that are rapidly making their way into the mainstream. New Classic items are now cemented as must-haves for many consumers and can be leveraged across restaurant segments and retailers. This year’s list includes whipped feta, chili crisp, sticky toffee pudding, hibiscus, and dirty soda. Typically, New Classic trends follow a pattern we’ve seen before: ube, a Trend to Watch in 2017, for example, moved to the New Classics list in last year’s report.

Foods and Flavors to Know for 2027 and Beyond: Ten more foods and flavors are on the radar for potential future growth, including buldak, Korean spicy chicken in a gochujang and chile sauce; doubanjiang, a fermented fava bean and chile paste at the heart of Sichuan cooking; falooda, a South Asian dessert of rose syrup, vermicelli, and basil seeds topped with ice cream or kulfi; and kinilaw, a Filipino dish of raw fish “cooked” in vinegar and citrus.

Beverages to Know for 2027 and Beyond: New this year, a list of 10 beverages to know for the future includes Vietnamese lemonade made with salted preserved lemons or limes; koji milk, an alternative milk made with koji, a Japanese mold; makgeolli, a milky Korean rice wine; and the cantarito, a Mexican cocktail consisting of orange, lime, and grapefruit soda traditionally served in a salt-rimmed clay cup.

CDMX (Mexico City) is the Cuisine to Know for 2027 and Beyond: As we look to what’s next for Mexican cuisine (one of the most-loved global cuisines by U.S. consumers), we see regional CDMX cuisine popping up more at operators stateside. As younger generations gain more purchasing power, it’s notable that 75% of Millennials, statistically more than any generation, are interested in trying CDMX cuisine. Overall, though, 58% of U.S. consumers are interested in trying it. Pulque, a fermented, agave-based beverage quintessential to CDMX culture, is up 147% on alcoholic beverage menus over the past 4 years, and 49% of U.S. consumers are interested in trying pambazos (a griddled bread roll dipped in mild red chile sauce and stuffed with potato and chorizo) but haven’t yet. The same is true of huaraches, an approachable classic CDMX concept featuring oblong corn tortillas topped with beans, meat, salsa, and cheese.

“We’ve been identifying trends early for more than 20 years,” said Jim Emling, CEO at Datassential. “We flagged Nashville Hot in 2014, and it reached Ubiquity on the Southern MAC in 2025. With 70% of consumers optimistic about the year ahead, now is the time to innovate. Our AI-powered growth forecasts are 98% accurate, so teams can plan around these predictions with confidence.”

U.S. Department of War acquisition teams can now rapidly procure and deploy WEKA NeuralMesh software and solutions to get more AI output per GPU and per watt.

CAMPBELL, Calif., Oct. 7, 2026 /PRNewswire/ — WEKA, the AI data and memory infrastructure company, today announced that WEKA Federal, its wholly-owned subsidiary, has been named an “Awardable” vendor in the Tradewinds Solutions Marketplace, recognized among a competitive field of applicants whose solutions demonstrated innovation, scalability, and potential impact on Department of War (DoW) missions. With this designation, WEKA® NeuralMesh™ software and solutions are now available for rapid procurement and deployment by DoW mission owners who need to accelerate artificial intelligence deployments in production without expanding their data center footprint or energy envelope.

The Tradewinds Solutions Marketplace is a digital repository of post-competition, readily awardable pitch videos that address the DoW’s most significant challenges in AI/ML, data, and analytics. This enables DoW program offices to avoid repeat technical evaluations and shortens the path from validated requirement to fielded capability. Tradewinds is housed in the DoW’s Chief Digital Artificial Intelligence Office (CDAO).

“Every AI system the DoW fields is competing for the same megawatts, the same rack space, and the same accelerators. WEKA NeuralMesh makes each of those go further by turning data from a bottleneck into a force multiplier,” said Brian Froeling, board member of WEKA Federal and chief revenue officer of WEKA. “The CDAO’s Awardable designation means there’s no procurement marathon ahead for DoW mission owners. Now they can award NeuralMesh directly and put it to work, fast.”

One Data Layer, Wherever the Mission Runs
NeuralMesh was architected for the AI era, not retrofitted for it. Backed by more than 170 patents, it runs on standard hardware and in major public clouds, serving POSIX, S3, NFS, SMB, and GPUDirect Storage from a single namespace that scales to exabytes. With NeuralMesh, DoW program owners can:

Run a unified data layer that supports AI training, inference, and analytics across accredited data centers, cloud regions, and air-gapped environments.Move applications between environments without requiring rewrites or separate infrastructure stacks.Serve training data, checkpoints, and inference workloads through a native S3 object store that shares the same NVMe blocks and namespace as file data; no separate tier, no gateway, no duplicate copies to secure and manage.Reduce infrastructure footprint by up to 8x and power draw by up to 6x versus scale-out NAS architectures at AI-factory scale, returning rack space, cooling headroom, and megawatts to the mission.Reduce model training time by up to 20x, compressing the path from data to deployed capability.Accelerate inference and agentic workloads with NeuralMesh and Augmented Memory GridTM, serving up to 10x more concurrent users per GPU while lowering cost per token.

Established in 2020, WEKA Federal operates as an independent subsidiary supporting U.S. federal, defense, and public sector missions, delivering solutions across accredited data centers, cloud, tactical edge, and air-gapped environments. U.S. federal government agencies, national laboratories, research institutions, and contractors rely on NeuralMesh to run production AI, machine learning, and accelerated compute workloads.

BioRadar Names David Relman and Kevin Esvelt Co-Chairs of Scientific Advisory Board

Dr. David Relman of Stanford and Dr. Kevin Esvelt of MIT — two of the most respected voices in U.S. biosecurity — will co-chair BioRadar’s Scientific Advisory Board and help lead the science behind its “biological weather service” early-warning platform

BOSTON, Oct. 7, 2026 /PRNewswire-PRWeb/ — BioRadar PBC, a biological intelligence company building an early-warning platform designed to detect biological threats that conventional surveillance miss, today announced that Dr. David Relman of Stanford University and Dr. Kevin Esvelt of MIT will serve as Co-Chairs of the company’s Scientific Advisory Board. As Co-Chairs, they will guide BioRadar’s scientific direction, advise the founding team, and help recruit additional members of the Scientific Advisory Board as the company builds its biological early-warning platform.

“BioRadar succeeds only if the intelligence we provide is rigorous enough that public-health and national-security leaders can trust it and act on it. That is fundamentally a science problem, and there are no two people better suited to help us solve it than David and Kevin.”

“Having the two best scientists on this topic, David and Kevin, will help us build an extraordinary tool that will make biointelligence a reality for our nation and the world,” said Dr. Ashish Jha, Former White House COVID-19 Response Coordinator and Co-Founder of BioRadar.

Leading Voices in Biosecurity

Relman and Esvelt are leading figures in biosecurity, infectious disease and biological risk whose work has helped shape both the science and policy surrounding biological threats.

Relman is the Thomas C. and Joan M. Merigan Professor in Medicine and Professor of Microbiology & Immunology at Stanford University and Chief of Infectious Diseases at the VA Palo Alto Health Care System. He was a founding member of the National Science Advisory Board for Biosecurity and most recently served as Senior Advisor in the White House Office of Pandemic Preparedness and Response Policy.

Esvelt is an Associate Professor at the MIT Media Lab and director of the Sculpting Evolution group. He pioneered the development of CRISPR-based gene drives and has become a leading researcher on catastrophic biological risk, early-warning systems, and technologies designed to strengthen society’s ability to prevent and respond to biological threats.

Built Around Scientific Rigor

For BioRadar, scientific rigor means more than detecting a signal – it means knowing whether that signal can be trusted.

“BioRadar will ultimately succeed only if the biological intelligence we produce is rigorous enough that public-health and national-security leaders can trust it and act on it,” said Jha. “Doing it well is ultimately a science problem — and there’s no one better suited to solving it than David and Kevin.”

“A signal by itself isn’t intelligence,” said Dr. Nikki Romanik, former Deputy Director of the White House Office of Pandemic Preparedness and Response Policy (OPPR), and Co-Founder of BioRadar. “Understanding whether it is meaningful, how confident we should be in it, and whether it warrants attention requires extraordinary scientific precision. Drs. Relman and Esvelt will help us bring that capability to the platform.”

“This team understands both sides of this problem: the science required to identify emerging biological threats and the realities facing decision-makers who have to respond to them,” said Relman. “BioRadar is taking seriously the challenge of producing biological intelligence that is scientifically rigorous, timely, and useful. I’m honored to help guide that effort and build the Scientific Advisory Board around it.”

“We are starting to see real progress on the detection side of this problem,” said Esvelt. “The harder part —the part that determines whether we can protect people — is translating that data into something decision-makers can trust and act on. That’s the gap BioRadar is built to close, and it’s why I am excited to help build the science behind it.”

BioRadar is building a biological weather service: a system that integrates environmental, clinical, behavioral and other data to identify emerging biological threats and give decision-makers earlier situational awareness. The platform is currently live in a pilot program, and the company plans to share additional updates as the platform develops.

About BioRadar

Powered by AI, BioRadar is a biological intelligence company building an early-warning platform designed to identify biological activity and threats that targeted surveillance may miss. The platform combines broad biological sensing with clinical, syndromic, behavioral, public-health and other signals to establish location-specific baselines, identify meaningful changes and provide decision-makers with context around what deserves attention. BioRadar was founded by Ashish Jha, former White House Covid-19 Response Coordinator, and Nikki Romanik, former Deputy Director of the White House Office of Pandemic Preparedness and Response Policy.
